Clean Eating with recipe included:

 

Homemade Baked Chicken Tenders

Serves 4

½ cup pecans, toasted in a skillet

½ cup whole wheat flour

2 t paprika

2 t dry mustard

2 t garlic powder

1 t onion powder

Salt and pepper, sprinkling

1 T organic canola oil

1/3 cup bread crumbs

½ cup buttermilk

1 pound chicken breast, cut into tender strips

Preheat oven to 450 degrees. Whip pecans, flour and spices in food processor and slowly drizzle in the oil. Put mixture in bowl and add bread crumbs. Add buttermilk to another bowl and toss tenders in buttermilk and then flour mixture. Bake on baking sheet for 7-9 minutes or until brown and firm. Nutrition per serving: 352 calories, 16 g fat, 2 g saturated fat, 20 g carbohydrates, 29 g protein, 3 g fiber, 300 mg sodium
